Stuffed zucchini & veggie churros

All vegetarian healthy meal. You need one zucchini per serving. Onions, spice, smashed tomatoes and grated cheese. Carve the zucchini with a spoon. Cut in cubes, cut the onion. Fry all together in olive oil. Add smashed tomatoes and herbs like basil/persil/oregon… Preheat the oven at 160°. Stuff the zucchini with the mixture and add the grated cheese. Put into the oven mid section for about 40 minutes. Bake the deep frozen carrot-potatoe churros. Bon appétit
