Stuffed zucchini & veggie churros

All vegetarian healthy meal. You need one zucchini per serving. Onions, spice, smashed tomatoes and grated cheese. Carve the zucchini with a spoon. Cut in cubes, cut the onion. Fry all together in olive oil. Add smashed tomatoes and herbs like basil/persil/oregon… Preheat the oven at 160°. Stuff the zucchini with the mixture and add the grated cheese. Put into the oven mid section for about 40 minutes. Bake the deep frozen carrot-potatoe churros. Bon appétit

Veggy gnocchi blue cheese

I love easy cooking for my weekday meals. This time I prepared the gnocchi as instructed. I put a glass of tomato sauce in my ovenready plate, added the gnocchi. I put some blue cheese slices and grated cheese in top. I put the plate in the preheated oven for 15 minutes quid. And my new London napkin 🇬🇧


Vegetarian meals are so tasteful and easy to prepare. Generally when I go shopping I buy a lot of preserved veggies, various deep frozen food and add a variety of sauces. You should always have quinoa, rice, noodles at home.

This is cheese filled puffy pastry with rice and salsify topped with a curry/coconut sauce.

🐸Vegetarian gnocchi🐸

Ingredients for 4 servings :

  1. 500g gnocchi
  2. 250g tomato sauce
  3. 2 onions
  4. 1 zucchini
  5. 200g grated cheese
  6. Olive oil

Prepare the gnocchi as instructed on the package.

Meanwhile you cut the onions and zucchini into slices. Fry altogether in hot olive oil.

Put a bit of olive oil in an oven supporting plate.

Add the tomato sauce.

Add the gnocchi.

Add the veggies.

Top it with grated cheese

Put into the oven for 10 minutes at 220°C

Serve with fresh salad.

Samossa and noodles

Easy peasy as I like my meals. You need 2 veggies Samossa per serving. 125g of wholewheat noodles and a tomatoe sauce. You can add cheese on the noodles.

Veggie wrap and noodles

Really easy & quick meal.

Deep frozen veggy wraps : prepare in the oven for a crispy trend.

Prepare any kind of noodles you like. I used whole wheat tagliatelli.

I added a tomatoe mozzarella topping.

Samossas and veggies

You need :

2 deep frozen veggie samossas per serving

1 piece of leek/onion/pepper

250g of fresh mushrooms

Put the samossa into the oven

Cut all the veggies and fry them altogether in a pan with a spoonful of olive oil. You may add paprika or curry to spice it up.
